  • 4 lamb shanks (about 2 lbs total)
  • Salt and freshly ground black pepper
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 cup apple vinegar
  • 2 cups beef or lamb broth
  • 2 tbsp tomato paste
  • 2 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 bay leaves

Instructions

  1. Preheat the oven to 325°F (163°C). Season lamb shanks with salt and pepper.
  2. In a Dutch oven, heat olive oil over medium-high heat. Sear lamb shanks until browned on all sides (5-7 minutes). Remove and set aside.
  3. In the same pot, sauté onions, carrots, celery, and garlic until softened (about 5 minutes).
  4. Deglaze with apple vinegar, then add broth and tomato paste; mix well.
  5. Return lamb shanks to the pot along with herbs. Bring to a simmer.
  6. Cover and braise in the oven for about 2 hours until tender.
  7. Optionally roast potatoes while braising for crispy texture.
