  • 24 vines of cherry tomatoes
  • 2 cloves garlic (minced)
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Sea salt & freshly ground black pepper
  • 4 slices crusty sourdough bread
  • 4 tbsp hummus
  • Sprinkle sunflower seeds

Instructions

  1. Preheat your oven to 170°C (340°F).
  2. In a mixing bowl, combine minced garlic, balsamic vinegar, and olive oil.
  3. Place the cherry tomatoes in an ovenproof dish and drizzle with the balsamic mixture; season with salt and pepper.
  4. Roast in the oven for 20 minutes until blistered and soft.
  5. While roasting, toast the sourdough bread to your liking.
  6. Spread hummus generously on each slice of toasted bread.
  7. Top each slice with roasted tomatoes and a spoonful of the balsamic mixture from the dish.
  8. Garnish with sunflower seeds and serve warm.
