  • 1 lb lean ground beef
  • 1 small red bell pepper, diced
  • 1 medium zucchini, diced
  • 2 cups red enchilada sauce
  • 1 (15 oz) can black beans, rinsed and drained
  • 8 corn tortillas, cut into wedges
  • 1 ½ cups shredded Mexican blend cheese

Instructions

  1. Preheat the oven to 425°F.
  2. In a large oven-safe skillet over medium-high heat, spray with cooking spray and add olive oil. Cook the ground beef, bell pepper, zucchini, and white parts of green onions for about 8 minutes until browned.
