  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2/3 cup cold butter (cubed)
  • Grated zest from 1 lemon (optional)
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese (softened)
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons cornstarch
  • 1 and 2/3 cups blueberries

Instructions

  1. Preheat the oven to 350°F. Line a 9-inch springform pan with parchment paper and spray it with nonstick cooking spray.
  2. In a large bowl, mix flour, baking powder, salt, brown sugar, sugar, and lemon zest.
  3. Incorporate cold butter until the mixture is grainy.
  4. Add eggs and vanilla until combined; the mixture should be crumbly.
  5. Press about two-thirds of the mixture into the bottom and up the sides of the prepared pan. Chill in the fridge.
  6. For the cheesecake filling, combine cream cheese, mascarpone, vanilla, sugar, and cornstarch until mixed. Add eggs one at a time until just combined.
  7. Pour half of the filling into the crust, sprinkle with blueberries, then add the remaining filling. Top with more blueberries and reserved crumbs.
  8. Bake for about 65-75 minutes or until golden brown; a toothpick inserted should come out clean.
  9. Prepare glaze by mixing powdered sugar with milk to desired consistency.
