Ingredients

Scale
  • 2 cups bread flour
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil
  • 1/2 tsp squid ink
  • 1 cup warm water
  • 4 oz button mushrooms
  • 2 Tbsp butter
  • 1/2 cup shallots (substitute with red onion)
  • 45 cloves garlic
  • 2 Tbsp cooking apple juice
  • Fresh thyme leaves
  • salt and pepper to taste
  • 1 cup jarred pesto sauce
  • 1 cup Green Pesto Gouda cheese

Instructions

  1. In a mixing bowl, combine warm water and active dry yeast; let sit for about 5 minutes until frothy.
  2. Add bread flour, garlic powder, salt, olive oil, and squid ink to the bowl; mix until combined.
  3. Knead the dough on a floured surface for about 10 minutes until smooth. Grease the bowl with olive oil, place the dough inside, cover it with a cloth, and let it rise in a warm place for about an hour.
  4. While the dough rises, slice button mushrooms into skull shapes; sauté them in butter with shallots and garlic until tender.
  5. Preheat oven to 450°F (230°C). Divide risen dough into portions and roll each into circles on a floured surface.
  6. Spread pesto over each flatbread; top with sautéed mushroom mixture and sprinkle with thyme leaves and cheese.
  7. Place flatbreads on a baking sheet and bake for about 10-12 minutes or until golden brown.
  8. For glaze: In a saucepan over medium heat, combine balsamic vinegar and honey; reduce slightly and brush over baked flatbreads before serving.
