  • 2 cups chopped vegetables (such as red onion, bell pepper, mushrooms, or broccoli)
  • 1 pound ground chicken or turkey
  • 8 eggs
  • 2 pinches salt (to taste)
  • 2 teaspoons unsalted butter
  • 8 burrito-sized tortillas
  • 2 cups shredded cheddar cheese (or Monterey jack, pepper jack, or a combination)

Instructions

  1. Heat olive oil in a nonstick skillet over medium heat. Sauté chopped vegetables until softened (about 4 minutes), then transfer to a bowl.
  2. In the same skillet, cook ground chicken or turkey until browned and fully cooked; transfer to the bowl with veggies.
  3. Whisk eggs and salt in a separate bowl until well combined.
  4. Melt butter in the skillet over medium-low heat; add whisked eggs and scramble gently until cooked through.
  5. Combine the egg mixture with chicken and veggies in the bowl.
  6. Assemble burritos by placing filling on tortillas, sprinkling cheese on top, and wrapping tightly.
