  • 1 ¾ cups whole milk
  • 6 chai tea bags
  • 2 cloves
  • 1 stick cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon allspice
  • 3 teaspoons powdered vegan gelatin
  • ⅓ cup white granulated sugar
  • 1 ½ cups thickened cream
  • 1 teaspoon vanilla extract
  • pinch of salt
  • ¼ cup white granulated sugar (for toffee)
  • 1 tablespoon water
  • 1 tablespoon pistachios, roughly chopped

Instructions

  1. In a saucepan, combine 1 cup of whole milk and the chai tea bags. Add in the cloves, cinnamon stick, ground ginger, and allspice. Heat over medium until just simmering, then remove from heat and let steep for about 10 minutes.
  2. In a separate bowl, combine 3 teaspoons of vegan gelatin with the remaining ¾ cup whole milk. Stir until dissolved. After steeping, remove tea bags and spices from the saucepan.
  3. Add the vegan gelatin mixture into the warm chai-infused milk while whisking continuously. Stir in ⅓ cup sugar, heavy cream, vanilla extract, and a pinch of salt until well combined.
  4. Pour the mixture into serving glasses or bowls. Refrigerate for at least 4 hours or until set.
  5. In a small saucepan, combine ¼ cup sugar and 1 tablespoon water. Cook over medium heat until golden brown. Remove from heat and stir in chopped pistachios. Pour onto parchment paper to cool before breaking into pieces.
  6. Once panna cotta is set, top each serving with pistachio toffee before enjoying your delicious Chai Panna Cotta!
