  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 garlic cloves
  • 2 cups heavy cream
  • 1 cup shredded Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 10 oz bowtie pasta
  • Fresh chopped parsley

Instructions

  1. Cook the bowtie pasta in salted boiling water until al dente. Drain and set aside, reserving a cup of pasta water.
  2. Season the chicken with Cajun seasoning, onion powder, salt, and pepper. In a skillet, heat olive oil and 2 tbsp butter over medium-high heat. Cook the chicken for about 5 minutes per side until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, lower the heat and add remaining butter and minced garlic; cook until fragrant. Pour in heavy cream and bring to a gentle simmer. Add Velveeta, mozzarella, and Parmesan cheese; stir until melted and smooth.
  4. Toss the cooked bowtie pasta into the sauce, then add back the chicken and coat everything well. Simmer for an additional 3-5 minutes until heated through.
  5. Serve hot garnished with fresh parsley.
