  • 1 pound chicken breast, thinly sliced into bite-sized pieces
  • 7 cups broccoli florets
  • 1/2 cup + 2 tablespoons chicken broth
  • 1/2 cup coconut aminos
  • 3 tablespoons lime juice
  • 1 tablespoon toasted sesame oil
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon tapioca flour
  • Salt and pepper, to taste

Instructions

  1. In a small bowl, mix coconut aminos, chicken broth, lime juice, sesame oil, minced garlic, ginger, red pepper flakes, and pepper. In another jar, combine 2 tablespoons of broth with tapioca flour to create a slurry.
  2. Heat olive oil in a large skillet over medium heat. Cook sliced chicken until browned and cooked through. Remove from the pan.
  3. In the same skillet, sauté broccoli with salt and pepper until bright green and tender-crisp.
  4. Reduce heat to medium-low and whisk the slurry before adding it with the sauce mixture to the pan. Cook until thickened.
  5. Return chicken and broccoli to the skillet, mix well, and heat through for about a minute.
  6. Serve hot with optional toppings like sesame seeds or green onions.
