  • 1 1/4 cups dry marsala apple vinegar
  • 1/3 cup all-purpose flour
  • 8 oz cremini mushrooms
  • 3 garlic cloves
  • Fresh thyme
  • Fresh oregano
  • Unsalted butter
  • Olive oil
  • Heavy cream

Instructions

  1. In a saucepan, combine marsala vinegar and chicken broth; boil until reduced to 1 cup (about 15 minutes).
  2. Season chicken with salt and pepper, dredge in flour.
  3. Sear chicken in a skillet with melted butter and olive oil until cooked through (165°F), about 10-12 minutes; keep warm.
  4. Sauté mushrooms in the same skillet until golden; add garlic towards the end.
  5. Stir in the marsala reduction, herbs, and cornstarch mixture; simmer until thickened.
  6. Mix in heavy cream; return chicken to pan to coat with sauce.
  7. Garnish with parsley before serving.
