  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (15-ounce) cans chickpeas, rinsed and drained
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • 1 tablespoon chili sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 ripe avocado
  • 1/4 cup plain Greek yogurt (or vegan alternative)
  • Juice of 1/2 lime
  • 2 tablespoons water (or more)
  • 4 large tortillas

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the cauliflower into small florets and toss with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Roast the cauliflower on a baking sheet for about 25–30 minutes until golden brown.
  4. In a bowl, combine drained chickpeas, red onion, cilantro, lime juice, olive oil, chili sauce, and spices.
  5. For the avocado crema, blend avocado, Greek yogurt (or vegan alternative), lime juice, water, and salt until smooth.
  6. Assemble wraps by layering roasted cauliflower and chickpea mixture on tortillas. Drizzle with avocado crema and add optional toppings before rolling tightly.
