Chili Mac is a delicious blend of hearty chili and creamy macaroni and cheese, making it the ultimate comfort food for any occasion.

  • 1 lb ground beef (80% lean)
  • 2 cups uncooked macaroni
  • 1 small onion (diced)
  • ½ cup bell pepper (diced)
  • 14.5 oz can diced tomatoes (undrained)
  • 1.25 oz packet chili seasoning
  • 1½ cups shredded cheddar cheese
  • ½ cup chicken broth
  • ½ cup heavy cream

Instructions

  1. In a large skillet over medium heat, cook ground beef with diced onion and bell pepper until browned; drain excess fat.
  2. Stir in chili seasoning, tomato paste, tomato sauce, diced tomatoes, chicken broth, and kidney beans; simmer for about 10 minutes.
  3. Meanwhile, cook macaroni in boiling water until al dente; drain.
  4. In the same pot used for macaroni, melt butter and whisk in flour; gradually add cream and milk until thickened.
  5. Mix in mustard powder, onion powder, salt, pepper, and hot sauce before combining with cooked macaroni.
  6. Fold in chili mixture and cheddar cheese until melted; serve hot garnished with fresh parsley.
