  • 1 can (13.5 oz) coconut milk
  • 1 cup beef or chicken broth
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • Salt and freshly ground black pepper
  • Juice of lime (for brightness)
  • Fresh cilantro, chopped (for garnish)
  • Cooked basmati rice (for serving)
  • Naan (for serving)

Instructions

  1. Season the beef with salt and pepper. Heat oil in a large pot over medium-high heat, sear the beef until browned on all sides, then set aside.
  2. In the same pot, sauté the onion until translucent, then add garlic and ginger; cook until fragrant.
  3. Stir in curry powder, cumin, coriander, and turmeric; cook for 2 minutes.
  4. Return the beef to the pot along with coconut milk and broth. Bring to a gentle simmer.
  5. Cover partially and reduce heat; let it simmer for about 1-1.5 hours until the beef is tender.
  6. Prepare basmati rice according to package instructions.
  7. Add lime juice before serving over rice with naan on the side.
