  • 1 (14 oz) can full-fat coconut cream
  • 2 cups beef or chicken broth
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a heavy pot over medium-high heat. Season lamb shanks with salt and pepper and brown them for about 5-7 minutes.
  2. Remove the shanks and sauté the onion until translucent. Add garlic and ginger; cook until fragrant.
  3. Stir in ground coriander, cumin, and cinnamon. Cook for an additional minute.
  4. Return lamb to the pot, add sweet potatoes, coconut cream, broth, and lime juice.
  5. Bring to a boil, then reduce heat and simmer covered for about 2 hours or until tender.
