  • 2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 3 ½ cups cake flour
  • 1 Tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup whole milk
  • 8 large egg whites
  • 1.5 quarts Cookies and Cream ice cream, softened
  • 2 cups whipped cream
  • Additional chopped Oreo cookies for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine softened butter, sugar, and vanilla extract until creamy. Gradually add in cake flour, baking powder, and salt; mix until combined. Slowly add the milk, mixing until smooth.
  3. In another bowl, whip egg whites and gently fold them into the batter along with chopped Oreo cookies.
  4. Divide the batter between prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a rack.
  5. Once cooled, layer one cake on a serving plate, spread half of the softened ice cream on top, then add the second layer.
  6. Top with remaining ice cream followed by whipped cream and garnish with additional chopped Oreo cookies.
