  • 1 ½ cups diced bell pepper (red and green)
  • 1 pint cherry tomatoes (halved)
  • 1 cup English cucumber (diced)
  • ½ cup red onions (finely diced)
  • ¾ cup fresh Cotija cheese
  • ¼ cup lime juice
  • 3 tablespoons avocado oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder

Instructions

  1. Boil corn in salted water for 4 minutes. Drain and cool.
  2. Cut kernels from the cob into a large mixing bowl.
  3. Add bell peppers, cherry tomatoes, cucumber, red onion, and cilantro.
  4. In a separate container, mix lime juice, avocado oil, honey, Dijon mustard, and seasonings; shake well.
  5. Pour dressing over the salad and toss gently until combined.
