  • 15.5 oz. black-eyed peas, drained and rinsed
  • 15 oz. sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp. chili powder
  • ½ tsp. kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp. fresh lime juice
  • ¼ tsp. garlic powder

Instructions

  1. Drain and rinse the black beans, black-eyed peas, and corn thoroughly; pat dry.
  2. In a large mixing bowl, combine the beans, corn, chopped cilantro, diced red bell pepper, orange bell pepper, and diced red onion.
  3. In a separate bowl, whisk together chili powder, kosher salt, granulated sugar, olive oil, white apple vinegar, fresh lime juice, and garlic powder until smooth.
  4. Pour the dressing over the bean and vegetable mixture; stir gently to coat evenly.
  5. Refrigerate for at least 30 minutes before serving to enhance flavors.
