  • 6 cups vegetable stock (or chicken stock)
  • 1 cup uncooked wild rice
  • 8 ounces baby bella mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 1 large sweet potato, peeled and diced
  • 1 small white onion, peeled and diced
  • 1 bay leaf
  • 1 ½ tablespoons Old Bay seasoning
  • 14 ounces unsweetened coconut milk
  • 2 large handfuls kale, roughly chopped

Instructions

  1. Prepare all vegetables by washing and chopping them into even pieces.
  2. In a large pot over medium heat, combine vegetable stock and uncooked wild rice. Bring to a boil, then reduce heat to low. Cover and simmer for about 30 minutes until rice is tender.
  3. Meanwhile, in another pan, heat a splash of vegetable stock over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic, carrots, celery, mushrooms, and sweet potato. Sauté for an additional 5 minutes until slightly softened.
  4. Once the wild rice is cooked, add the sautéed vegetables to the pot along with the bay leaf and Old Bay seasoning. Stir in coconut milk and mix well.
  5. Allow the soup to simmer on low heat for an additional 10–15 minutes until all vegetables are tender. Remove the bay leaf before serving.
  6. Stir in chopped kale until wilted. Season with fine sea salt and freshly cracked black pepper to taste.
