  • 4 oz cream cheese
  • 2 cups shredded mozzarella cheese
  • 2 tsp baking powder
  • 1½ cups superfine almond flour
  • 3 large eggs
  • 1 (1-oz) package ranch dressing mix
  • 1 cup shredded cheddar cheese
  • ½ cup chopped cooked turkey bacon

Instructions

  1. Preheat your oven to 400ºF.
  2. In a microwave-safe bowl, melt the cream cheese and mozzarella cheese together in the microwave for about 1 minute until smooth.
  3. Stir in the baking powder, eggs, ranch dressing mix, and almond flour until well combined.
  4. Fold in the shredded cheddar cheese and chopped turkey bacon until evenly mixed.
  5. Spray a cast iron skillet with cooking spray, form the dough into 11 or 12 balls, and arrange them in the skillet. Refrigerate for 10 minutes.
  6. Bake for 20 to 25 minutes until golden brown. Optionally brush with melted butter and sprinkle with dried parsley before serving.
