Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 2 cups chicken broth
  • 1 lb cheese tortellini, fresh or frozen
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup heavy cream
  • Optional: Chopped chives

Instructions

  1. In a mixing bowl, coat chicken pieces with olive oil, Cajun seasoning, and smoked paprika.
  2. Heat a large skillet over medium-high heat and sear the chicken until golden brown (about 6-8 minutes). Remove from skillet and set aside.
  3. In the same skillet, melt butter over medium heat and sauté minced garlic for about 1 minute.
  4. Whisk in flour to create a roux, then gradually add milk and chicken broth while stirring to avoid lumps. Simmer until slightly thickened.
  5. Cook tortellini according to package instructions; drain.
  6. Stir melted cheeses and heavy cream into the sauce until smooth.
  7. Combine cooked tortellini and chicken with the sauce; toss gently to coat.
  8. Serve hot, garnished with chopped chives if desired.
