  • 2 large boneless, skinless chicken breasts
  • 12 oz penne pasta
  • 1 cup grated Parmesan cheese (for crusting)
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 2 oz cream cheese (softened)
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • ½ tsp Italian seasoning
  • ½ tsp dried basil
  • ½ tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh chopped parsley or herbs for garnish

Instructions

  1. Boil water in a large pot and cook penne pasta until al dente. Drain and set aside.
  2. Season chicken strips with Cajun seasoning, smoked paprika, salt, and pepper. Coat with Parmesan cheese.
  3. In a skillet, heat 2 tbsp butter and olive oil over medium-high heat; sear chicken for about 5-7 minutes until golden brown.
  4. Add remaining garlic towards the end of cooking; remove chicken and keep warm.
  5. In the same skillet, melt the remaining butter, sauté garlic briefly, then add heavy cream and chicken broth. Bring to a simmer.
  6. Whisk in cream cheese until smooth, followed by mozzarella, cheddar, and Parmesan until thickened.
  7. Season sauce with Italian seasoning and basil; let it simmer for another few minutes.
  8. Toss cooked penne into the sauce until well-coated; serve topped with crispy chicken.
