  • Juice and zest of 2 lemons
  • 1 cup long-grain rice
  • 2 cups water or vegetable broth
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes on each side until golden brown and cooked through; set aside.
  2. In the same skillet, lower heat to medium, add minced garlic, and sauté until fragrant (about 30 seconds). Pour in chicken broth and let simmer for 2 minutes before adding heavy cream, lemon juice, and zest. Stir until slightly thickened.
  3. Rinse rice under cold water. In a pot, combine rice with water or vegetable broth, bring to boil, cover, and reduce heat to low. Cook for about 15 minutes until liquid is absorbed; fluff with fork and stir in herbs.
  4. Return cooked chicken to the skillet to warm through for an additional minute. Serve over herb rice with sauce drizzled on top.
