  • 12 tablespoons olive oil or avocado oil
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon kosher salt (plus more for topping)
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Drain and rinse the chickpeas thoroughly, then pat them dry with a kitchen towel. Spread them on the baking sheet and let them rest for 5-10 minutes.
  3. In a mixing bowl, combine chili powder, garlic powder, onion powder, cumin, kosher salt, and black pepper. Drizzle olive oil over the dried chickpeas and toss until well coated. Add the spice mix and toss again.
  4. Spread the seasoned chickpeas in a single layer on the baking sheet. Roast for about 25-30 minutes, shaking the pan every 10 minutes for even cooking.
