  • 1 cup milk
  • 3 cups gluten free flour blend
  • 6 tablespoons unsalted butter (frozen)
  • ½ cup cane sugar (for dough)
  • ½ cup cane sugar (for topping)
  • 2 teaspoons ground cinnamon

Instructions

  1. Activate the yeast by mixing warm milk, yeast, and 1 tablespoon of sugar in a small bowl; let it froth for about 5-10 minutes.
  2. In a large bowl or stand mixer, combine gluten free flour blend, remaining sugar, salt, and vanilla extract.
  3. Add the frothy yeast mixture and mix until combined.
  4. Grate frozen butter into the dough mixture and mix gently.
  5. Cover and let rise in a warm area for about 45 minutes until doubled in size.
  6. Preheat oven to 375°F (190°C). Roll out the dough into a rectangle about 1/4 inch thick.
  7. Brush melted butter over the dough and sprinkle with cinnamon-sugar mixture; roll tightly from one long side.
  8. Cut the log into pieces (1-2 inches thick) and place upright in greased muffin tins.
  9. Let rise for an additional 15-20 minutes before baking for about 25 minutes until golden brown.
