  • 1 tablespoon (13 g) granulated sugar
  • 1 teaspoon baking powder
  • 1 ¼ teaspoon kosher salt (divided)
  • 56 tablespoons (6983 g) olive oil (divided)
  • 2 sprigs fresh rosemary (or ½ tsp dried rosemary)
  • Optional toppings: flaky sea salt, freshly grated parmesan, fresh ground pepper

Instructions

  1. Combine water and milk in a microwave-safe measuring cup; heat until lukewarm (about 110ºF). Stir in yeast and let sit until frothy.
  2. In a stand mixer bowl, mix gluten-free flour, sugar, baking powder, and salt. Add the milk mixture and olive oil; mix until combined.
  3. Beat on medium-high speed for 6 minutes until thick yet pourable.
  4. Grease your pan with olive oil and spread the dough evenly.
  5. Drizzle more olive oil on top, create indentations with fingers, then sprinkle with salt and rosemary.
  6. Let rise for 30 minutes while preheating oven to 350ºF. Bake for 30-35 minutes until golden brown.
