  • 7 large bell peppers
  • 1 pound lean ground beef (or alternative)
  • 1½ cup cooked brown rice
  • 1 medium onion (diced)
  • 23 garlic cloves (minced)
  • 14.5 ounces diced tomatoes (one can)
  • 1 cup shredded cheddar jack cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare a baking dish by placing the halved bell peppers cut side up.
  2. In a large pan over medium heat, sauté diced onion in olive oil until soft. Add minced garlic and cook for another minute.
  3. Stir in the ground beef and cook until browned, breaking it apart with a wooden spoon.
  4. Mix in cooked brown rice, diced tomatoes, tomato paste, oregano, paprika, salt, and pepper. Cook for an additional 4-5 minutes.
  5. Stuff each pepper with the meat mixture and arrange them in the baking dish.
  6. Bake for about 10-12 minutes until peppers are tender. Top with shredded cheese and bake for another 5-7 minutes until melted.
  7. Garnish with chopped parsley before serving.
