  • 1 pound ribeye steak, cut into 1-inch pieces
  • Kosher salt and ground black pepper
  • 2 teaspoons extra virgin olive oil
  • 23 tablespoons ghee
  • 23 teaspoons minced garlic
  • Fresh parsley, roughly chopped

Instructions

  1. Prepare the steak by cutting it into 1-inch pieces and patting dry with paper towels. Season generously with salt and pepper.
  2. Heat a cast iron skillet over medium-high heat and add olive oil. Once hot, sear the steak pieces for about 30-60 seconds per side until nicely browned.
  3. Remove the steak from the skillet and set aside. In the same skillet, melt ghee and add minced garlic, stirring until fragrant.
  4. Return the seared steak to the skillet, tossing in the garlic sauce until cooked to your desired doneness (130-135°F for medium-rare).
  5. Serve immediately, garnished with parsley.
