Ingredients

  • Grilled chicken breast slices
  • Ripe avocado slices
  • Sweet potatoes
  • Olive oil
  • Paprika & chili powder
  • Cherry tomatoes
  • Fresh cilantro
  • Lime wedges
  • Red onion
  • Lime juice
  • Salt

Instructions

  1. Preheat the oven to 425°F (220°C). Cut sweet potatoes into fry shapes and toss with olive oil, paprika, chili powder, salt, and pepper. Spread on a baking sheet and roast for about 25 minutes until crispy.
  2. While fries cook, heat a grill or grill pan over medium-high heat. Season chicken breasts with salt and pepper; grill for 6-7 minutes per side until fully cooked.
  3. In a mixing bowl, mash ripe avocados and mix in finely chopped red onion, lime juice, cilantro, and salt to taste.
  4. Assemble your bowl starting with crispy sweet potato fries as the base. Top with grilled chicken slices, avocado, cherry tomatoes, cilantro, and guacamole. Serve with lime wedges.
