  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/4 cups ripe bananas (mashed)
  • 1 (8-ounce) can crushed pineapple with juice
  • 1/2 cup + 1 tbsp sunflower oil
  • 1/2 cup chopped macadamia nuts
  • 1/2 cup unsweetened coconut flakes

Instructions

  1. Preheat your oven to 350°F and grease a loaf pan.
  2. Dry roast the macadamia nuts in a skillet until slightly browned; chop them once cooled.
  3. In a bowl, mix dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, combine wet ingredients: eggs, vanilla extract, mashed bananas, crushed pineapple (with juice), and oil.
  5. Gradually add dry ingredients to the wet mixture; stir gently without overmixing.
  6. Fold in the chopped macadamia nuts and coconut flakes.
  7. Pour batter into the prepared loaf pan and bake for 55-65 minutes or until a knife inserted comes out clean.
  8. Cool completely in the pan before slicing.
