Ingredients

  • 2 tbsp olive oil
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 tsp fresh ginger (minced)
  • 1/2 cup bell peppers (diced)
  • 1 lb boneless skinless chicken breasts
  • 6 cups reduced-sodium chicken broth
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 2 tbsp lemon juice

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. Sauté diced onion, minced garlic, and ginger for 3-4 minutes until fragrant.
  3. Add bell peppers, Italian seasoning, red pepper flakes, sea salt, and black pepper; cook for another 3 minutes.
  4. Add chicken breasts and chicken broth; simmer for 20 minutes until chicken is cooked through.
  5. Shred the chicken with two forks and return it to the pot.
  6. Add broccoli and cauliflower; simmer for an additional 10 minutes until tender.
  7. Stir in lemon juice before serving.
