  • 1/8 tsp salt
  • 3 Tbsp melted coconut oil
  • 1 Tbsp water
  • 1 tsp vanilla extract
  • 2 Tbsp dark chocolate
  • 3 Tbsp peanut butter or Sunbutter
  • 1 cup dark chocolate
  • 1/2 Tbsp coconut oil

Instructions

  1. Prepare the Base Layer: In a bowl, mix 1 1/4 cups almond flour, 3 tablespoons coconut sugar, 1 tablespoon ground flaxseed, and 1/8 teaspoon salt. Stir in 3 tablespoons melted coconut oil, 1 tablespoon water, and 1 teaspoon vanilla extract until a thick dough forms.
  2. Shape the Bars: Line a baking sheet with parchment paper and spread the mixture evenly to about ½ inch thick. Freeze for 15-20 minutes until firm.
  3. Create the Chocolate Filling: Mix 2 tablespoons dark chocolate with 3 tablespoons peanut butter until smooth; pour over the chilled base layer.
  4. Finalize with Chocolate Coating: Melt remaining dark chocolate (1 cup) with ½ tablespoon coconut oil; pour over the filling and freeze again for 15 minutes.
  5. Cut and Serve: Remove from freezer, cut into desired bars, and enjoy or store in an airtight container.
