  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, diced
  • 2 celery stalks, diced
  • 1 1/2 cups dried green or brown lentils, rinsed
  • 3 medium potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 8 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and black pepper, to taste
  • 2 cups fresh spinach or kale (optional)
  • Fresh parsley, for garnish

Instructions

  1. In a large pot over medium heat, heat olive oil. Add diced onion, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add rinsed lentils, diced potatoes, canned tomatoes (with juices), vegetable broth, cumin, smoked paprika, thyme, rosemary, salt, and pepper.
  4. Bring to a boil; reduce heat to low. Cover and simmer for 30-40 minutes until lentils and potatoes are tender.
  5. If desired, stir in fresh spinach or kale during the last 5 minutes of cooking until wilted.
  6. Taste and adjust seasonings as needed before serving hot.
