  • 2 pounds Ground Beef (96/4)
  • 15 oz can Sliced Stewed Tomatoes
  • 10 oz can RO-TEL (diced tomatoes with green chiles)
  • 15 oz can Black Beans
  • 15 oz can Pinto Beans
  • 15 oz can Whole Kernel Corn
  • 12 oz bag Frozen Pepper & Onion Blend
  • 12 oz bag Frozen Broccoli & Cauliflower Florets
  • 2 packets Taco Seasoning
  • 1 packet Ranch Dip Mix
  • 8 oz Fat Free Cream Cheese, room temp
  • 1 cup Fat Free Greek Yogurt

Instructions

  1. In a large pot over medium-high heat, brown 2 pounds of lean ground beef until fully cooked.
  2. Add 15 oz sliced stewed tomatoes, 10 oz diced tomatoes with green chiles, 15 oz black beans, 15 oz pinto beans, 15 oz corn, 2 packets taco seasoning, and 1 packet ranch dip mix. Stir and bring to a boil.
  3. Incorporate 12 oz frozen pepper & onion blend and 12 oz frozen broccoli & cauliflower florets into the pot. Reduce heat and simmer for 6–8 minutes until veggies are tender.
  4. Stir in 8 oz room temperature fat-free cream cheese and 1 cup fat-free Greek yogurt until smooth.
  5. Serve hot with optional toppings such as cilantro, diced onions, jalapeños, shredded cheese, or tortilla chips.
