  • 3 tablespoons sugar
  • 1 1/2 tablespoons corn starch
  • 1 package pre-made pie crust (2 in a pack)
  • 1 tablespoon water (for egg wash)
  • 3/4 cup powdered sugar (for icing)

Instructions

  1. Prepare the blueberry filling by cooking blueberries in a saucepan until soft. Mix in sugar, cornstarch, and salt; stir until thickened. Add lemon juice and cool slightly.
  2. Preheat your oven to 425°F (220°C) and line two cookie sheets with parchment paper.
  3. Roll out pie crust and cut out circles using a pie crust cutter. Place half on prepared sheets.
  4. Spoon blueberry filling onto each circle; cover with remaining circles and crimp edges.
  5. Brush tops with egg wash made from whisking together the egg and water.
  6. Bake for about 20 minutes until golden brown.
  7. Once cooled, drizzle icing made from powdered sugar and milk over the tops.
