  • 1 lb Korean sweet potato noodles
  • 2 lbs thin-sliced beef (or chicken/tofu)
  • 3 medium carrots (julienned)
  • 1 large white onion (thinly sliced)
  • 1/2 bunch green onions (chopped)
  • 6 garlic cloves (minced)
  • 1/2 lb spinach leaves
  • 4 tbsp sesame oil
  • 1 tbsp olive oil
  • 6 tbsp soy sauce
  • 3 tbsp brown sugar

Instructions

  1. Prepare the noodles by boiling them for 5-6 minutes in salted water until tender; drain and set aside.
  2. In a skillet, cook your protein choice over high heat until browned, seasoning with half the soy sauce, sesame oil, and brown sugar; set aside.
  3. Sauté carrots and onions in olive oil until softened. Add remaining soy sauce, sesame oil, brown sugar, garlic, and green onions; cook for another minute.
  4. Stir in spinach until wilted. Combine all cooked ingredients with the noodles in a large mixing bowl and toss well to mix.
