  • 1 lb Breakfast Sausage
  • 2 oz Cream Cheese
  • 1/2 cup Heavy Cream
  • 1/4 cup Broth
  • 1 1/2 cup Almond Flour
  • 2 tsp Baking Powder
  • 3 Egg Whites
  • 2 tbsp COLD Butter
  • Salt to taste
  • Pepper to taste
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Chili Powder

Instructions

  1. Cook the sausage in a medium saucepan over medium heat until browned. Set aside.
  2. In the same saucepan, combine cream cheese and heavy cream. Whisk together over heat for about 5 minutes.
  3. Add the cooked sausage to the cream mixture, whisking continuously until thickened (about 2-3 minutes). Adjust consistency with broth if necessary.
  4. Preheat oven to 400°F and prepare a muffin pan.
  5. In a bowl, mix almond flour, baking powder, salt, garlic powder, and chili powder.
  6. Cut cold butter into the dry ingredients until crumbly.
  7. Whip egg whites until fluffy and gently fold into the mixture.
  8. Scoop batter into muffin slots and bake for 10-15 minutes until golden brown.
