  • 1 lb ground turkey
  • 1 shredded zucchini (about 1 cup)
  • 1 egg
  • 2 tsp dried minced onion
  • 2 tsp dried minced garlic
  • 2 tsp dried basil
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella
  • 1/3 cup grated parmesan

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a casserole dish with cooking spray.
  2. In a mixing bowl, combine ground turkey, shredded zucchini, egg, minced onion, garlic, basil, and salt. Mix well and form into approximately 24 meatballs.
  3. Place the meatballs in the prepared casserole dish and bake for 30 minutes or until fully cooked.
  4. Drain any excess liquid from the dish. Top the meatballs with marinara sauce and sprinkle mozzarella and parmesan cheese on top.
  5. Return to the oven for an additional 10–15 minutes until the cheese is melted and bubbly.
