Ingredients

  • 2/3 cup coconut flour
  • 2 tbsp psyllium husk powder
  • 1 tsp xanthan gum
  • 1 tsp baking powder
  • GENERIOUS pinch salt
  • 1 tbsp nigella and/or sesame seeds
  • 1 cup hot water
  • 1/4 cup full-fat natural yogurt
  • 2 tbsp melted coconut oil or olive oil
  • 2 tbsp melted coconut oil or butter or olive oil
  • handful chopped parsley or coriander or cilantro
  • generous pinch salt

Instructions

  1. Preheat oven to 180°C (356°F).
  2. In a mixing bowl, combine coconut flour, psyllium husk powder, xanthan gum, baking powder, and salt.
  3. Gradually add hot water and yogurt while stirring until a dough forms.
  4. Shape the dough into a ball and let it rest for a few minutes.
  5. Cut the dough into six pieces and roll each piece out between parchment paper until about 1/2 cm thick.
  6. Place on an upturned baking sheet and bake for 12-15 minutes until golden brown.
  7. Serve warm, topped with melted butter or olive oil and garnished with parsley or cilantro.
