  • 1 1/2 lb ground beef
  • 1/4 cup chopped onion
  • 2 cloves garlic (minced)
  • 12 ounces cauliflower rice (fresh or frozen)
  • 1 medium green pepper (chopped)
  • 1/2 medium red or orange pepper (chopped)
  • 1/2 cup diced tomatoes
  • 1 tbsp tomato paste
  • 1 1/2 cups shredded mozzarella

Instructions

  1. Heat avocado oil in a large skillet over medium heat. Add ground beef, chopped onion, minced garlic, Italian seasoning, salt, pepper, and red pepper flakes. Cook until the beef is browned.
  2. Stir in cauliflower rice, chopped green and red peppers, diced tomatoes, tomato paste, and water. Bring to a simmer and cook on medium-low until vegetables are tender (about 10 minutes).
  3. Sprinkle shredded mozzarella over the mixture and cover with a lid. Cook for an additional 3 to 4 minutes until cheese is melted.
