  • 1 cup Greek yogurt
  • 1 cup granulated sugar

  • 1/2 cup vegetable oil
  • 1 1/2 cups blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F and grease an 8.5×4.5 inch loaf pan.
  2. In one bowl, sift together flour, baking powder, and salt. In another bowl, whisk together Greek yogurt, sugar, eggs, lemon zest, vanilla extract, and vegetable oil until smooth.
  3. Gradually combine the wet ingredients with the dry ingredients until mixed well.

  5. Pour the batter into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
  6. While baking, prepare the lemon syrup by heating lemon juice and sugar until dissolved.
