  • 1 lb large shrimp, peeled and deveined
  • 12 oz orzo pasta
  • 4 oz crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, roughly chopped
  • Juice and zest of 1 large lemon
  • Fresh parsley and dill, chopped
  • 1 tbsp extra-virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1 garlic clove, finely grated
  • 1/4 tsp crushed red pepper flakes (optional)
  • 2 tbsp extra-virgin olive oil for orzo

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss shrimp with olive oil, salt, pepper, oregano, smoked paprika, and lemon zest in a mixing bowl. Spread evenly on the baking sheet.
  3. Roast shrimp for 8–10 minutes until opaque; set aside.
  4. In a large pot of salted boiling water, cook orzo according to package instructions until al dente. Drain.
  5. While orzo is hot, stir in olive oil, lemon juice, garlic, and red pepper flakes.
  6. Fold in cherry tomatoes, spinach, parsley, and dill until spinach wilts.
  7. Gently mix in feta cheese and capers if desired.
  8. Serve warm topped with roasted shrimp.
