  • All-purpose flour
  • Brown sugar
  • Granulated sugar
  • Salt
  • Unsalted butter
  • Freshly squeezed lemon juice
  • Lemon zest
  • Cornstarch
  • Water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine rolled oats, all-purpose flour, brown sugar, granulated sugar, and salt. Add softened butter and mix until you achieve coarse crumbs.
  3. Press half of the mixture into a greased 9×13-inch baking dish.
  4. In a saucepan over medium heat, whisk together lemon juice, lemon zest, granulated sugar, cornstarch, and water until thickened.
  5. Pour the lemon filling over the crust and sprinkle the remaining oat mixture on top.
  6. Bake for 38 minutes until golden brown. Allow to cool completely before cutting into bars.
