  • 2 mini cucumbers (chopped)
  • 1 tablespoon red onion (chopped)
  • 1 tablespoon fresh oregano (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1/2 red bell pepper (chopped)
  • 1 cup little tomatoes (cut into halves)
  • 1/2 cup Kalamata olives
  • 3.5 ounces feta cheese
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic (minced)
  • Salt and pepper (to taste)

Instructions

  1. Rinse the chickpeas under cold water and place them in a mixing bowl.
  2. Chop the cucumbers, red onion, oregano, parsley, red bell pepper, and tomatoes; add to the mixing bowl.
  3. In the same bowl, mix in olive oil, lemon juice, and minced garlic; toss gently to combine.
  4. Season with salt and pepper to taste.
