  • 1 large spaghetti squash
  • 1/2 lb lean ground beef
  • 24 oz marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the spaghetti squash lengthwise and remove seeds. Place in a baking dish and roast for 50-60 minutes until fork-tender. Let cool, then shred into strands with a fork.
  3. In a medium skillet over medium heat, brown the ground beef for about 7-10 minutes. Drain excess grease, add marinara sauce, and simmer for an additional 3 minutes.
  4. Mix ricotta cheese with Italian seasoning, salt, pepper, Parmesan cheese, and 1 cup mozzarella in a bowl.
  5. Combine half the meat sauce with each spaghetti squash half. Layer with the cheesy mixture followed by the remaining meat sauce and top with remaining mozzarella.
  6. Bake for another 10-20 minutes until cheese is melted and bubbly. Broil for extra browning if desired.
