  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly until well combined.
  2. If the mixture is too dry, add almond milk one tablespoon at a time until it reaches a moldable consistency.
  3. Gently fold in mini dark chocolate chips until evenly distributed.
  4. Scoop out about 1 tablespoon of the mixture and roll it into a ball shape using your hands. Repeat until all the mixture is used.
  5. Place the protein balls on a parchment-lined baking sheet and refrigerate for at least 20 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to one week.
