  • 1 1/2 lb chicken breast
  • 1 cup cubed fresh pineapple
  • 1/2 head broccoli (about 1 cup)
  • 1/2 cup red bell pepper
  • 34 tbsp oil for stir-frying
  • 23 tbsp coconut aminos
  • 2 tbsp arrowroot flour
  • 1/3 cup coconut aminos
  • 2 tbsp rice vinegar
  • 1 tbsp arrowroot flour
  • 1 tbsp sesame oil
  • ~ 3 tbsp pineapple juice
  • 2 small cloves of garlic
  • 1 inch fresh ginger
  • 2 stalks of green onion (green and white part separated)

Instructions

  1. Cut chicken into small pieces and marinate with coconut aminos and arrowroot flour.
  2. Prep vegetables: cut broccoli into florets, cube bell pepper, mince garlic, and slice ginger.
  3. Make the teriyaki sauce by mixing coconut aminos, rice vinegar, arrowroot flour, sesame oil, and pineapple juice.
  4. Heat oil in a large skillet; sauté bell peppers and broccoli until tender.
  5. Cook marinated chicken with garlic until browned and cooked through.
  6. Combine sautéed vegetables, ginger, pineapple, and teriyaki sauce in the skillet; stir until well-coated and sticky.
  7. Garnish with sliced green onions and serve.
