  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste

Instructions

  1. In a large skillet over medium heat, heat olive oil and brown the sausage slices for about 4–5 minutes. Remove and set aside.
  2. In the same skillet, sauté onion and bell pepper for 3–4 minutes until softened. Add garlic and cook for an additional 30 seconds.
  3. Stir in smoked paprika and black pepper, then add uncooked rice and toast for 1–2 minutes until slightly golden.
  4. Pour in chicken broth and BBQ sauce; stir well to combine. Add the sausage back into the skillet.
  5. Bring to a boil, cover with a lid, reduce heat to low, and simmer for about 20–22 minutes until rice is tender and liquid is absorbed.
  6. Let rest off the heat for 5 minutes before fluffing with a fork.
