  • 1 cup ricotta cheese
  • 1 tsp fresh thyme leaves (optional)
  • 6 sheets phyllo pastry
  • ¼ cup melted butter or olive oil
  • ¼ cup honey
  • ½ tsp red chili flakes

Instructions

  1. In a mixing bowl, combine crumbled feta, ricotta cheese, and optional thyme leaves until smooth.
  2. Unroll phyllo pastry and cut each sheet in half lengthwise. Keep covered with a damp towel.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Brush one phyllo strip with melted butter or oil, spoon filling at one end, fold sides in, and roll tightly.
  5. Place seam-side down on the baking sheet and repeat until all filling is used.
