Ingredients

Scale
  • 1½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (such as Cool Whip), thawed
  • 1 cup packed brown sugar
  • ½ cup light corn syrup
  • ¼ cup unsalted butter
  • 2 large eggs, lightly beaten
  • 1½ cups chopped pecans
  • Pinch of salt

Instructions

  1. Prepare the crust by combining graham cracker crumbs, granulated sugar, and melted butter in a medium bowl. Press firmly into a 9×13-inch baking dish and chill for 10–15 minutes.
  2. In another bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract; mix well. Fold in thawed whipped topping and spread evenly over the chilled crust.
  3. In a saucepan over medium heat, combine brown sugar, corn syrup, and butter. Stir until it bubbles gently. Remove from heat and whisk in beaten eggs slowly to avoid scrambling. Stir in chopped pecans and pinch of salt; let cool slightly.
  4. Pour the pecan mixture over the cream cheese layer evenly. Cover and refrigerate for at least 4 hours or overnight to set.
  5. Slice into bars using a warm knife and serve as-is or topped with whipped cream or vanilla ice cream.
