  • 1 cup crushed pineapple, drained
  • 1/2 cup sour cream
  • 1 1/2 cups powdered sugar
  • 23 tbsp reserved pineapple juice

  2. In a large bowl, beat the softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and optional pineapple extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this mixture to the butter mixture alternately with sour cream. Fold in crushed pineapple.
  4. Pour batter into the prepared pan and bake for 75-85 minutes or until a toothpick comes out clean.
  5. Let cool for 15 minutes before transferring to a wire rack. Prepare the glaze by whisking powdered sugar with reserved pineapple juice until smooth. Drizzle over cooled cake.
